Good Eats.

A couple weekends ago, my neice started selling
her first order of girl scout cookies. 
My hubby ordered a few boxes, however my favorite cookie was MIA. 
Do you remember this delicious Girl Scout cookie? 
 

Well, apparently they are no longer being made anymore.  When I looked them up online, I actually found out they haven't been part of the cookie menu for about 5 years...shows how often I order from the girl scouts.

I decided to try to re-create these little bites of lemon deliciousness and I think I came pretty dang close. 

Lemon Pastry Cremes

1 egg
1/2 tsp salt
3/4 cup sugar
2 1/3 cup flour
1 tsp baking soda
1 tsp vanilla extract
3/4 cup brown sugar; packed
1 stick of butter; softened
1 can of Duncan Hines lemon icing


Combine all ingredients.
Mix well.
Roll into one inch balls.
Place on a baking sheet.
Cook on 350 degrees for 9 minutes.
Let cool and spread with icing.
